What makes Wendougee engineering different
all prosumer espresso machines are variations on the same theme for the most part: the E61 group, vibratory pump, basic PID. Wendougee wanted to tackle these issues from a different approach. And they started with choosing commercial grade component. The pressure sensor is a German WIKA. The flow meter is an Italian GICAR. The group is a saturated made of 316L stainless steel, and they went with commercial grade gear pump. On top of that hardware sits the E-Bar a control layer that lets you draw and design the pressure and flow profile curves you want, shot by shot.
It's closer to a lab instrument than to anything you'd call a home appliance, and the rest of this page is the parts list that earns the comparison.

Group Head
Saturated 316L group head
The brew boiler on the Wendougee DATA S is 0.8L Saturated group head made of 316L stainless steel, the same design commercial La Marzocco machines use. Because the group is part of the boiler rather than heated through it, there's no cooling flush before the first shot, and brew temperature stays steady from shot to shot.
<-- Swipe Left

Dual boiler
1.8L steam boiler made of 316L stainless
The DATA S Has a 1.8 L steam boiler made of 316L stainless steel, the same corrosion-resistant grade as the saturated group. It climbs past 2 bar of pressure and reaches water temperatures of 140 °C, steam performance usually reserved for commercial machines. Incoming cold water passes through the steam boiler and pre-heat the water before it reaches the brew Boiler, so the brew boiler does not drop due to the cold water, which is give the Wendougee DATA S, extreme thermal stability.

Gear Pump
Commercial grade built gear pump
Where rotary pumps push water at a roughly fixed pressure and the vibratory bump are loud and not accurate, a gear pump uses interlocking gears running at variable speeds. The Wendougee DATA S adjusts pump speed hundreds of times per second, following whatever pressure or flow curve you've programmed. It also runs quieter, an even hum rather than the classic vibratory buzz, and produces smoother transitions between curve stages while maintaining extreme accuracy.

Flow Meter
Italian GICAR flow meter for volume control.
The GICAR flow meter in the Wendougee DATA S sits inline with the group and counts every millilitre of water that passes through it. That real-time data feeds the E-bar app as you pull, showing you exactly how much liquid has left the group head and how fast it's flowing. Set a target volume per profile and the DATA S cuts the shot automatically when it hits the number, no scale required for a repeatable yield.

Pressure Sensor
German WIKA Pressure Sensor
WIKA is the sensor most commercial espresso machine builders reach for when they need readings they can trust. On the Wendougee DATA S it sits inline with the group and feeds live pressure data back to the E-bar app every few milliseconds, and the pump correct itself mid-shot. hence the choice of a brand with a 75-year track record in industrial instrumentation.

Pressure Gauge
German WIKA Steam Pressure Gauge
The analog WIKA gauge on the front panel reads steam boiler pressure directly, useful for knowing at a glance whether the machine is ready to steam milk. It's the same WIKA brand as the brew-side pressure sensor, so you're looking at one sensor family across the machine rather than a mix of bargain parts. Glance-readable, no app needed for this one.

App Controled
Pressure and flow profiling in the E-bar app
Build a profile curve in the Wendougee E-bar app on IOS or Android Wendougee DATA S, pre-infusion ramp, pressure plateau, declining tail, whatever the coffee wants. Save the profile under the bean it's dialled for. The app shows live pressure, flow, and temperature graphs as the shot pulls, so you can see exactly where your curve tracked and where it missed. Share finished profiles to the community tab, pull other people's down, tweak them to your water and grinder. Firmware updates arrive over-the-air.

Tactile Interaction
Wooden paddle to launch your saved profile
The paddle on the front of the Wendougee DATA S is the trigger for whichever profile you've loaded in the E-bar app, push it, the shot runs the curve you programmed. push it again, and the shot stops. It's a physical, tactile control in a world of glass touchscreens, and it keeps your phone out of the drip tray.

Bluetooth Connectivity
Bluetooth for scale and grinder
The Wendougee DATA S talks to BOOKOO Themis Mini, BOOKOO Themis Ultra, and Acaia Lunar(not supported yet) scales over Bluetooth and cuts the shot automatically at your target weight, no watching the scale, no reaching for the paddle. It also pairs with Wendougee MILO Play, MILO II, and ARES grinders so grind size syncs to each saved profile. Change bean, change profile, grinder adjusts. Less dial-in, more drinking.

Robust Construction
Commercial-grade build
Full stainless-steel body, copper pipework inside, and 25 kg of weight on the counter. The chassis is built to the same mechanical standard you'd see on a commercial machine, scaled to fit a 29 cm wide footprint. Lift the lid and you can see it, thick-walled boilers, clean routing, no flimsy plastic where metal ought to be. Open the side panels and the inside is as serviceable as the outside is clean.

Needle valve
Needle valve for max flow
A small access hole on the top of the machine sits directly above the needle valve. Open it with a flat-head screwdriver to raise or lower the maximum flow rate the group can push through the puck. The factory setting is 12 ml per second, which suits most workflows, drop it for slower pours on lighter roasts, leave it alone for everyday espresso. It's hardware control over a limit that most machines hide behind software.

Steam Wand
Cool-touch steam wand, four-hole tip
The 1.8 L insulated steam boiler drives a cool-touch wand with a four-hole tip. One pull textures a 500 ml jug, enough for two flat whites, without the boiler needing to catch its breath. Grab the wand a few seconds after you cut the steam and it's still cool in your hand, which is what you want when you're three drinks deep and not slowing down. The four-hole tip also runs a wider, more stable swirl than the two- or three-hole tips you find on most home machines, so you get tighter microfoam faster, especially with oat, which is notoriously fussy on narrow tips.

A look under the hood
Most espresso machines hide their internals for a reason, they're not always pretty. The DATA S is the opposite. Press play and watch it come together piece by piece, and you'll see why the people who own this machine talk about its build the way other people talk about watches. Clean routing, honest materials, parts you can name. It's the kind of inside that earns the outside.

Style Without Compromise
The Wendougee Data-S keeps a clean, minimalist design, made to feel at home in any kitchen. It comes in three timeless finishes (Black, Grey, or White) so you can choose the one that best fits your space, whether it’s modern and sharp or warm and relaxed.
Every detail feels considered, from the top for cups warmer to the tray. Nothing is there just for show, it all designed and exist for a purpose.
It’s not only a capable machine on the inside, but also a quiet focal point in your coffee corner. One you’ll actually want to keep on display.

FAQs
Please read our FAQs page to find out more.
Does the Wendougee DATA S ship to the EU and EEA?
Yes. Vellutto ships the Wendougee DATA S across the EU and EEA with insured carriers. Handling is 1–2 business days, transit 2–7 business days depending on destination.
What is the difference between the DATA S and the Wendougee LITA?
Both machines come from Wendougee's prosumer range, but they're aimed at pretty different users.
The DATA S is the serious one. Dual boiler, gear pump, and full pressure and flow profiling through the Wendougee E-bar app. The 1.8L steam boiler handles milk steaming without breaking a sweat — useful if you're pulling back-to-back drinks or working with larger jugs. The gear pump matters too: profiling curves come out smoother and more repeatable than anything a vibration pump can do, so if you're dialling in specific extraction shapes, this is the one. You can also plumb it straight into a filtered water line, which means no tank to refill.
The LITA is smaller, lighter, and more affordable. It uses dual vibration pumps and a 0.8L steam boiler — fine for one or two drinks at a time, but it'll run out of steam faster and isn't as thermally stable under load. What it does have that the DATA S doesn't: an onboard display and a control disc right on the group head, so you can tweak settings without pulling out your phone. It's also much kinder to a small kitchen counter.
Pick the DATA S for steam power, gear-pump profiling precision, and direct water plumbing. Pick the LITA if budget, footprint, or built-in on-machine controls matter more than raw capability.
Do I need a Wendougee grinder to use the DATA S?
No — the DATA S works with any grinder. That said, pairing it with a Wendougee grinder unlocks extra features through the E-bar app:
- Wendougee MILO II or MILO Play: you can save a grind size to each profile and recall it with a single tap in the E-bar app, so switching between beans or profiles doesn't mean re-dialling from scratch.
- Wendougee ARES: goes one step further and syncs the grind size automatically when you change profiles. It cuts dial-in time significantly, which is mostly a win in commercial settings where you're switching beans throughout the day.
What is max flow rate and how does the DATA S control it?
Max flow rate is the upper limit on how much water the group can push through the puck per second. On the DATA S it's set by a needle valve under a small access hole on top of the machine. Open the valve with a flat-head screwdriver to raise the limit, close it to drop it. Factory setting is 12 ml per second, which suits most workflows.
Is the gear pump louder or quieter than a vibratory pump?
No — gear pumps are noticeably quieter than vibration pumps, much closer to a rotary pump in sound. You get a smooth, even hum rather than the buzzy rattle a vibratory pump makes.
Most DATA S owners say the steam wand and the grinder are louder than the pump itself. Pulling an early shot won't wake someone sleeping in the next room, which is a real problem with a lot of vibration-pump machines.
Can the Wendougee DATA S be plumbed directly into a water line?
Yes. A plumb-in kit is included in the box — nothing extra to buy. Switching between the 1.5L internal reservoir and a direct water line is done from underneath the machine and doesn't require any additional parts.
Just make sure the machine is connected to a filtered water supply. Unfiltered tap water will cause limescale to build up inside the boilers and can seriously damage the machine over time.
What is included in the box?
- 58mm bottomless portafilter with wooden handle
- Wendougee competition baskets, 18g and 22g
- Backflushing disc
- Shower screen brush
- Plumb-in kit
- Tablet / iPhone stand (handy for the E-bar app while you're dialling in)
- Wendougee DATA stickers
Why is they call the DATA S Mockingbird machine?
The nickname comes from Marko at Bella Barista. The idea: the DATA S can replicate virtually any espresso profile from any other machine. Take the shot parameters off a Decent DE1, a Slayer, a La Marzocco, a Profitec Pro 800, or even a lever machine, build the equivalent curve in the E-bar app, and run it on the DATA S.
Is the Wendougee DATA S similar to the Decent espresso machine?
Both machines handle pressure profiling and flow control, but they get there through completely different engineering.
The DATA S is built around traditional boilers with accurate temperature probes, so thermal stability comes from sheer thermal mass. It runs a gear pump, which is quieter and better built than the vibration pumps most machines use. And because it's a true dual boiler, you can pull a shot and steam milk at the same time.
The Decent DE1 uses thermoblock technology instead — water is heated rapidly on demand, right before it hits the group head. It runs two vibration pumps, one for cold water and one for hot. You can't brew and steam simultaneously on a DE1. What the Decent does give you that the DATA S doesn't: temperature profiling through the shot, adjusting the brew temperature mid-pull.
So it comes down to what you care about: dual-boiler thermal feel, simultaneous brew and steam, and a quiet gear pump point toward the DATA S. Mid-shot temperature control points toward the Decent.
What is flow profiling and how does it differ?
Flow profiling controls the amount of water per second rather than the pressure. As the coffee puck changes resistance during extraction, the pressure will rise and fall to maintain a constant flow rate. This can lead to more even extractions. In flow mode, the gear pump adjusts its speed to maintain the set flow rate. The principle is similar to what the Decent DE1+ does.
Which mode should I use pressure profiling or flow priority?
Honestly, it depends on the coffee and what you're chasing in the cup.
Pressure profiling is the intuitive choice if you've used a lever machine — you think in pressure phases, and that's what the curves look like. Flow profiling is often easier to dial in, because the pump quietly corrects for small grind inconsistencies that would otherwise throw off a pressure-based shot.
How long does the Wendougee DATA S take to heat up?
About 10 minutes from cold to brew-ready, which is faster than most E61 machines. For best consistency, let it sit a couple of minutes longer after it hits temperature so the group head and portafilter fully stabilise before your first shot.
Can I share espresso profiles with other Wendougee DATA S users?
Yes. The Wendougee E-bar app includes a Community tab where users upload and download profiles, so beginners can pull up recipes from experienced baristas instead of dialling everything in from zero.
One thing to be realistic about: downloading a profile won't give you someone else's exact shot. Grinder, beans, water, and ambient conditions all push the result around, so a shared profile is a head start — you'll still need to tweak the grind and probably adjust a few parameters to make it sing on your setup.
Can the Wendougee DATA S stop extraction by weight using a scale?
Yes. The DATA S pairs with an external scale over Bluetooth and cuts the shot automatically when it reaches your target weight — no watching the scale and reaching for the paddle.
Supported scales right now:
- BooKoo
- Acaia
How do I maintain the Wendougee DATA S?
- Daily: rinse the group head with water and clean the steam wand after every use.
- Weekly: backflush with a dedicated espresso-machine detergent like Cafiza.
- Every 3–6 months: descale the boilers. Frequency depends on your water hardness.
The Wendougee E-bar app includes a maintenance program that tracks these intervals and pings you when something's due.
The full manual isn't publicly available yet, so for anything beyond basic upkeep, get in contact with us for more details.
What kind of water should I use in the Wendougee DATA S?
Filtered water in the 15–60 ppm TDS range with balanced alkalinity works best — it extracts well and won't chew up the boilers.
If you're plumbing the DATA S in directly, you need a proper filtration system on the line. Unfiltered tap water will cause limescale buildup inside the boilers and eventually damage the machine.
Does the Wendougee DATA S fit under standard kitchen cabinets?
Usually yes, but measure first. The machine's footprint:
- Width: 29 cm
- Depth: 50–52 cm
- Height (without tablet): 37 cm
- Height (with tablet on the stand): around 46 cm
Most standard under-cabinet clearances will accommodate it even with a tablet mounted, but check two things before committing: the depth (you need counter space for the full 50–52 cm plus room behind for hoses/plumbing) in case you wanna connect directly to the water supply with a filter and check the clearance in front for swinging the portafilter in and out.
Can the Wendougee DATA S firmware be updated?
Yes. The Wendougee E-bar app gets regular updates that add new features, and machine firmware is flashed through the same app — you don't need cables or a service visit.
Follow the manufacturer's instructions when an update runs. Don't unplug the machine or close the app partway through, or you risk bricking the firmware.
What problems does the Wendougee DATA S solve, and why choose it?
Most of the DATA S's features map directly to specific frustrations home baristas run into. Here's how it handles them:
Inconsistent shots. The gear pump holds pressure steadily with real-time feedback, so shot-to-shot variation drops and your profiles actually become reproducible instead of lucky.
Not enough control over extraction. Choose pressure profiling or flow profiling, adjust the pump in fine increments, and build whatever curve you want — pre-infusion ramps, pressure plateaus, declining tails. Every profile saves in the E-bar app and recalls with a tap.
The learning curve on manual machines. The E-bar app shows live pressure, flow, and temperature graphs while you pull, and lets you save what worked. Pair it with the MILO II grinder and Themis scale and you get a guided dial-in workflow that walks you through the process step by step.
Temperature swings. Two independent stainless-steel boilers, each with its own PID controller, handle brew and steam separately. Stability is on par with commercial machines.
Slow warm-up. About five minutes from cold to brew-ready — faster than most E61 machines in this category.
Loud, uneven pumps. The gear pump is much quieter than a vibration pump and gives smoother pressure transitions. In sound and feel, it's closer to a rotary.
Grinder and scale integration that doesn't really exist on most machines. Paired with the MILO II and the Themis, grind size syncs to each profile and the shot stops automatically at your target weight.
No way to learn from other baristas. The E-bar app has a community feed for uploading and downloading extraction curves. Starting from a proven profile is a lot friendlier than building from zero.
Cleaning. Programmable cleaning cycles, a three-way valve that makes backflushing simple, and a front-access drain on the steam boiler for routine maintenance.
Footprint. 29 cm wide, 50 cm deep — narrower than most commercial-style dual boilers, so it fits on a normal kitchen counter instead of taking it over.
What the DATA S unlocks beyond fixing those problems:
- Room to experiment with profiles you can't build on a manual machine
- Actually getting what you paid for out of expensive beans
- Pulling extreme light roasts — the high-acidity Scandinavian-style coffees that most home machines struggle with
How does the DATA S compare to the Lelit Bianca and ECM Synchronika?
All three are dual-boiler prosumer machines in roughly the same price tier, but they solve different problems.
The Lelit Bianca is E61-based with a manual flow-control paddle. You shape the shot by hand, in real time, every pull. It's the enthusiast's dream if you want to feel the shot, but there's no programmable profile, no app, no repeatability between shots unless your hand is very steady.
The ECM Synchronika is the traditional choice. E61, dual boiler, rotary pump, rock-solid build. No profiling at all, you get temperature and steam, and that's the pitch. If you want a machine that will outlive three apartments and never surprise you, this is it.
The Wendougee DATA S sits in a different category. Saturated 316L group instead of E61, gear pump instead of vibratory or rotary, and full pressure-and-flow profiling through the E-bar app with saved profiles per coffee. You design the curve once, run it from the paddle, and get the same shot every time. Scale-stop and grinder sync are built in.
Pick the Bianca if you want hands-on paddle control. Pick the Synchronika if you want a machine that never changes. Pick the DATA S if you want programmable, repeatable, software-driven shots with an ecosystem around it.
